This healthy frozen strawberry dessert recipe is really close to my heart as it happens to be what my brother and I requested for our birthday “cake” every single year when we were wee little kids! We’re twins, and although we couldn’t be more different, there’s one thing we always agreed on, which is that nothing beats this frozen strawberry dessert! It’s simply perfect in every way.
Am I the only one who can’t get enough of strawberries? I just love that time of the year in late spring when you start seeing (and smelling) those sweet, red strawberries piled high in the grocery store. That’s when I start getting excited about long summer days, and dreaming of all the fancy cocktails and frozen desserts I can make for backyard dinner parties.
Even though I could eat strawberries every day for the rest of my life, I still somehow always end up with more than I know what to do with. That’s probably why I have a hundred and one strawberry recipes. Anyway, this creation is, to this very day, one of my favorite desserts ever. It’s wonderful with a slice of sugar free angel food cake, a piece of chocolate brownie, or just by itself!
Are Strawberries Good for You?
Yes! Strawberries are a great source of vitamin C and potassium, plus they are high in antioxidants. Strawberries can help reduce inflammation, are good for heart health, and might even protect you against disease.
What is the Healthiest Dessert you Can Eat?
Hmm, a tricky question. Fruit is healthy, of course, but is it dessert if it’s just plain fruit? Personally, I don’t think so… This strawberry freeze is definitely a contender for healthiest dessert! You’ve got the natural sweetness of the strawberry that’s enhanced by coconut sugar, plus the fiber from oat flour and pecans, and protein from the egg whites!
What Goes Well with Strawberries?
It might be easier to ask what doesn’t go well with strawberries, they’re so versatile and can be used in all sorts of recipes! Of course you can mix strawberries with other fruits, my favorite combinations are bananas, blueberries, and rhubarb. Strawberries also pair well with anything creamy, such as yogurt, cream cheese, whipped cream, etc.
There are just so many things that compliment strawberries! There’s the classics, like chocolate and vanilla, the more modest options like nuts or oats that put the strawberries in the spotlight, and of course the sophisticated- think of champagne or balsamic vinegar.

What you Need to Make this Healthy Frozen Strawberry Dessert
This recipe is made of natural, good-for-you ingredients. It’s also pretty flexible, so you can swap out any ingredients that you’re missing or don’t like!
Frozen strawberries
Lemon juice
Egg whites
Monk fruit sweetener (or just use the same coconut sugar as you use for the crumb)
Coconut sugar
Pecans (or try almonds, hazelnuts, or any other nuts you like!)
Oat flour
Ghee (or regular butter)
How to Make this Healthy, Frozen Strawberry Dessert
Strawberry freeze is one of those super easy desserts that comes together in a snap. It goes like this:
Chop the pecans. This is probably the most labor intensive step, but I bet you could use a food processor as a work around!
Mix chopped pecans, oat flour, coconut sugar and ghee
Bake this crumb mixture until golden brown and toasty
Blend frozen strawberries, sweetener, egg white and lemon juice
Spread a layer of crumb in a baking pan, pour the blended strawberry over this, then sprinkle the remaining crumb on top
Freeze until set!

IngredientsFor the crumbs:6 Tbsp Ghee, melted1 1/2 Cups Oat Flour (GF if needed)1/2 Cup Coconut sugar, packed3/4 Cup Pecans finely choppedFor the filling:2 Egg whites3/4 Cup Monkfruit (or granulated sweetener of choice)15 oz Frozen whole strawberries partially thawed2 Tbsp Lemon juice
InstructionsPreheat your oven to 375 degrees.In a large bowl, mix together all of the crumb ingredients.Spread the crumbs evenly onto a baking sheet and bake until golden brown, about 15-20 mins, stirring twice during the cooking process. While the crumbs bake, place all of the strawberry filling ingredients in large bowl and beat on high until it thickens, about 10 mins. I used my Kitchenaid stand mixer, set it to high and walked away and let it do it’s thang.
Once the crumbs are finished, spread them in the bottom of 9×13 pan, reserving 1 cup for the top.Pour the filling onto the crumb base and smooth.Sprinkle with the remaining crumbs.Freeze it until set, about 4 hours.DEVOUR.
