Ingredients:

1 (1kg) chicken drumsticks whole , cut into pieces
3 Knorr double Cubes
1 teaspoon salt
10 teaspons crayfish ungrounded

Local Akpu aka Santana Balls (made from tapioca casava) rolled and flattened as big as pennies

they help to tell you how crisp the chicken gets as they are white in texture and take a while to brown up and tough up like crisps

1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika

Instructions:

In a large bowl, combine everything seasoning salt,crayfish, pepper, garlic powder, paprika, and cayenne pepper (if using). Add the chicken pieces and toss to coat. Cover and refrigerate for at least 3 to 30 minutes, or up to overnight.

Heat about 1 inch of vegetable or red palm oil (ororo) in a large skillet or Dutch oven over medium heat.
Fry the chicken “a`nd sa“ntana balls or bobozee in batches for 10-12 minutes per side, or until golden brown and cooked through.
Drain the chicken on paper towels and serve immediately. Serve As Snack with Fried fufu Santana Balls or Bobozee Fries & zobo Hibiscus drink …

Here are some tips for making the best fried chicken:

Use a good quality chicken. A young, tender chicken will be more juicy and flavorful.if you can get Native Fowl which is naturally tough it gives it a teeth jerky experience
Soak the chicken in buttermilk or any milky liquid of your liking we suggest local alternatives like kunu or tiger nut milk . This will help to tenderize the meat and make it more flavorful.

Use a mixture of flour and cornstarch for the coating. This will help to create a crispy crust.
Don’t overcrowd the pan when frying the chicken. This will lower the temperature of the oil and make the chicken soggy.
Let the chicken drain on paper towels before serving. This will help to remove any excess oil.
